A Delicious Way to Start the New Year!
Happy New Year to everyone! Last weekend, I appeared on the “Weekend Today Show” and one of the dishes I made was an almond cake- simply delicious! The recipe I made on the show is from my forthcoming book, but here is a variation on that recipe- compliments of the pastry chef at Del Posto, Brooks Headley. Buon appetito!
Tortino di Mandorle
Almond Cake
6 ounces butter (1- ¼ sticks)
½ cup granulated sugar
2 whole eggs
Zest of one orange
Zest of one lemon
One scraped vanilla bean
1 teaspoon baking powder
¾ cup pastry flour (1/2 cake flour, 1/2 all-purpose flour)
1 cup whole unpeeled almonds, finely ground (or ¾ cup almond flour)
1 tablespoon kosher salt
1/2 cup sliced almonds
1 tablespoon granulated sugar
1 teaspoon egg white
In a large mixing bowl, cream butter and sugar together. Add eggs one by one. Add citrus zest and vanilla seeds. Sift almond flour, baking powder, pastry flour and salt together. Add dry mix until just combined. Spread into 10-inch buttered and floured cake pan.
Combine sliced almonds, sugar, and egg whites. Scatter on top of raw cake mix. Bake 30 to 40 minutes at 325 degrees until golden and brown.
Allow to cool 30 minutes to serve warm, or cool to room temperature and serve. Either way it’s delicious.

Hi, am hoping someone from one of the crews will reply.
This recipe calls for butter, but does not say whether it is salted or unsalted butter.
I would love to try it - and since I make my own butter, just want to know which I need to make for recipe.

We just saw a show (probably a repeat) where you made an almond cake. It had a farm where ducks and chickens were being raised.
Which of your cookbooks contains the recepie for that cake. We want to buy that book, and cant tell which of your cookbooks it is.

I too am looking for the recipe for the Almond Cake baked in a springform pan on Lydia’s pbs program.
On the same program she make Lentils and Rice and Roasted Duck.
If these recipes are in one of her books, please let me know which one it is in.

I too was looking to the almond cake on PBS as the above people. But I tried this recipe and it was excellent. I still put it in a spring form pan and was a bit concerned about how little the batter was. anyway, the cake was delicious and I got so much complement from my guests. and it was easy to make. not too sweet and not too many eggs.
