Lidia’s Pesto Recipes from “The Today Show” on NBC

 

In case you missed Lidia yesterday on “The Today Show” on NBC, here is the clip from the show.

Classic Pesto

Yields: 1 cup

INGREDIENTS

DIRECTIONS

In a mortar:
Start with salt and few leaves of basil. Crush with a pestle, keep adding leaves a few at a time, then add garlic and pound until the mixture becomes a paste. Add pignoli and work into a paste, then add cheese and slowly pour the olive oil. Work all into a creamy consistency.

In a blender:
Add basil, salt and garlic. Work into a paste, add pignoli and slowly pour half of the olive oil. Add cheese and the remaining olive oil. Blend until it becomes a homogenous, creamy paste.

    Unfortunatley I do not speak italian as in the last person’s blog but have been to Italy at least 12 times. I love love love everything about your recipes and just went to Becco last week. I live in NJ and frequent Manhattan restaurants. YOURS IS THE BEST. I love the newsletter. I am downsizing from my home and the biggest concern is the kitchen, I need a good kitchen to cook!     I need your help! I am addicted to the Family Table Cookbook and have modified the Roasted Turkey and Pan Sauce recipe for a roaster chicken and my family went nuts over it! The balsamic glaze is out of thie world! My sweet man wants me to make the Turkey version for a huge family gathering this weekend and brought home a 20 lb turkey! Should I adjust cooking times at all? I am soooooo worried about drying out the bird. This is for in-laws, so the pressure is on;-)

    I saw a recipe this week and forget the ingredients? Thick bacon, garlic, spinach, twisted spaghetti, Cheese?… and I forget what else. The show was on TV this week. If anone caught this recipe… Please remind me of the ingredients.
